How to store barbecue sauce
Unopened barbecue sauce keeps about a year in the pantry. Once opened, refrigerate it — it keeps about 4 months.
Like ketchup, refrigeration here is mostly about quality. The sauce is acidic and sugary enough not to become dangerous quickly, but it darkens and loses its brightness at room temperature.
Keep the cap and rim clean. Sugar residue around the opening is a reliable mold site.
Never reuse marinade that has been in contact with raw meat as a table sauce without boiling it first. Set aside a clean portion before marinating if you want sauce for serving.
Barbecue sauce does not freeze usefully, though it comes to no harm if you do.

Why barbecue sauce goes bad
Barbecue sauce is well protected by the same combination as ketchup, usually in stronger form: vinegar acidity bringing the pH to around 3.5–4.0, a high sugar content from molasses, brown sugar, or corn syrup that binds free water, and salt.
Sugar's role is worth understanding — it preserves by lowering water activity, the same principle that makes jam and honey stable. Between acid and sugar, barbecue sauce is a difficult environment for microbes, and an opened bottle in a refrigerator is one of the lower-risk items in it.
What changes is quality. The sugars continue to undergo Maillard browning slowly even at refrigerator temperature, so the sauce darkens and the flavor turns from bright to flat and slightly burnt-tasting. Smoke and spice volatiles fade.
The genuine risk with barbecue sauce is not the bottle at all but cross-contamination: sauce used to baste raw chicken or pork, then brushed on cooked meat or served alongside, carries whatever was on the raw meat. Bring used marinade to a full boil before serving it, or reserve a clean portion in advance.
Discard on mold at the cap or surface, fizzing or a bulging bottle, and a fermented or alcoholic smell. Darkening alone is normal.
