How to store beef roast
A raw beef roast keeps 3–5 days refrigerated as a whole-muscle cut. Bottom shelf, in a pan or container, since a large cut can leak.
Roasts are among the best candidates for long freezer storage — up to 12 months at good quality — because their low surface-to-mass ratio means proportionally little of the meat is exposed to the air that causes freezer burn. Vacuum sealing extends this further.
Allow serious time for thawing. A large roast can take two or three days in the refrigerator, and counter-thawing is not an option for a cut this size — the outside would sit at room temperature for many hours before the centre softened.
Cooked roast should be sliced or divided into shallow containers before refrigerating rather than stored whole, so it cools quickly.

Why beef roast goes bad

That same geometry works against you after cooking. A hot roast has substantial thermal mass and cools slowly from the outside in, so a whole roast left on the counter or put into the fridge intact can hold its centre in the 40–140°F growth range for hours. Slicing it and using shallow containers is the fix, and it matters more here than the 3–4 day leftover window that follows.
The spoilage signals are conventional: sour or ammoniac smell, slimy film, green or gray discoloration. Surface darkening where the meat pressed against packaging, or a brown interior in a vacuum pack, is oxygen chemistry rather than spoilage.
