How to store cucumbers

Cucumbers are one of the few vegetables where the refrigerator is a compromise rather than an improvement. They keep about a week refrigerated, but they suffer for it.

Ideally, store them at around 50°F — cool but not cold. In practice most kitchens have no such place, so the fridge is the realistic option: put them in the warmest part, usually the front of an upper shelf or the crisper, and use them within a week.

Keep them away from apples, bananas, and tomatoes. Cucumbers are strongly ethylene-sensitive and yellow and soften rapidly near them.

Store them dry and loosely wrapped in a paper towel rather than sealed in plastic, which traps moisture against the skin and causes slimy patches.

Cucumbers do not freeze — they thaw to water. Pickling is the way to preserve them.

Why cucumbers go bad

Cucumbers are a warm-climate crop and suffer chilling injury below about 50°F. The damage shows as water-soaked translucent patches, pitting on the skin, and accelerated decay once the cucumber is removed from the cold. This is a real effect and it is why commercial handling guidance specifies around 50°F for cucumbers, well above normal refrigerator temperature.

The practical compromise is that a refrigerated cucumber deteriorates from chilling injury over roughly a week, while an unrefrigerated one deteriorates faster from ordinary spoilage. The fridge still wins — just not by as much as you would expect, and this is why cucumbers so often go soft in the drawer.

They are also among the most ethylene-sensitive vegetables. Exposure causes rapid yellowing and softening, so a cucumber stored next to apples will fail conspicuously early.

The waxy coating on supermarket cucumbers is applied to slow moisture loss through the thin skin — food-grade and safe, though worth washing off.

Failure shows as soft mushy ends, a slimy film, wrinkled and yellowing skin, and a sour smell. Cucumbers usually go from one end first, so a soft tip on an otherwise firm cucumber can simply be cut away.
