Is sprouted garlic safe?

Yes, if the clove is still firm. The green sprout can taste bitter — split the clove and remove it.

Why is homemade garlic-in-oil dangerous?

Garlic can carry Clostridium botulinum spores. Submerged in oil at room temperature, they can produce botulinum toxin with no smell or taste. Refrigerate and use within 4 days, or discard.
