How to store ranch dressing

Refrigerated ranch dressing — the kind sold in the chilled section — keeps about 1–2 months opened, or its printed date if sooner.

Shelf-stable bottled ranch from the pantry aisle keeps unopened until its date, then goes in the refrigerator for about 6–9 months.

Homemade ranch made with buttermilk, sour cream, or mayonnaise keeps only about a week, since it has no preservatives and a much higher dairy content.

Keep the bottle upright, cap clean, and use a clean utensil for tubs. Do not dip vegetables directly into the container.

Ranch does not freeze — the dairy separates and the emulsion breaks irreversibly.

Why ranch dressing goes bad

Ranch sits awkwardly between a shelf-stable condiment and a fresh dairy product, and which one it resembles depends on how it was made.

Commercial shelf-stable ranch is built on an acidified, pasteurized mayonnaise-style base with buttermilk solids rather than fresh buttermilk, plus preservatives such as potassium sorbate and calcium disodium EDTA. Its pH is low enough to inhibit pathogens, and the dairy component is dried rather than fresh. That is why an unopened bottle sits in a warm aisle for a year.

Refrigerated and homemade ranch contain actual fresh cultured dairy — buttermilk, sour cream, yogurt — which brings moisture, protein, and a much shorter life. The acidity of cultured dairy helps, but not nearly as much as full acidification does.

The herbs matter too. Fresh garlic, chives, and parsley add moisture and their own microbial load, which is another reason homemade dressings are measured in days rather than months.

Discard on a sour smell beyond the normal tang, mold at the cap or on the surface, bubbling or a domed lid, and separation that will not shake back together.

Slight thickening in the fridge is normal, as is a little separation in natural or preservative-free brands.
