What temperature should your fridge actually be?
Every duration we publish assumes a fridge at or below 40°F. It is worth knowing whether yours qualifies.
The two numbers
- Refrigerator: at or below 40°F (4°C). Most sources suggest aiming for 35–38°F, which leaves you a margin before the door opens and the temperature drifts up.
- Freezer: 0°F (−18°C). At 0°F bacterial growth stops entirely.
Forty degrees is not a target, it is a ceiling. Every storage window on this site is derived from food held at or below it. A fridge running at 45°F is not "a little warm" — it is inside the danger zone, and the times we publish no longer apply.
Your dial probably does not tell you the temperature
Most refrigerators have a control marked 1 through 5, or "min" to "max". Those are settings, not temperatures. Nothing about a dial on 3 tells you what the inside of the box is actually doing, and the relationship drifts as the appliance ages, as the door seal wears, and as the room around it changes temperature between winter and summer.
Even fridges with a digital display are showing you a target or a single sensor reading, usually from one specific spot. The FDA's recommendation is unambiguous and it is the same one we would give: use a standalone appliance thermometer.
How to actually check it
An appliance thermometer costs a few dollars and is the highest-value purchase in this entire subject. Here is the procedure:
- Put it in the middle of the middle shelf, not against the back wall and not in the door. You want a representative reading, not the coldest or warmest point.
- Leave it overnight, or at least eight hours, without opening the door more than usual. A reading taken five minutes after you close the door tells you very little.
- Read it first thing in the morning, before the first opening of the day. That is your baseline.
- Adjust one step and repeat. If you are above 40°F, turn the dial one increment colder and test again the next night. Do not swing it to maximum — you will freeze the produce and waste more food than you save.
- Re-check seasonally. A garage or porch refrigerator in particular will behave very differently in August than in January.
Two thermometers is better than one — leave a second in the freezer. A freezer that has drifted to 10°F still keeps food frozen solid, so nothing looks wrong, but quality degrades much faster than the freezer windows we publish assume.
Your fridge is not one temperature
It is a box with a cold source, a fan, and a door that opens. Different parts of it run several degrees apart, and knowing the map is most of the practical benefit here.
- The door is the warmest place, by a wide margin. It is exposed to room air every time you open it. This is why the built-in egg tray and milk shelf on the door are genuinely bad design: those are two of the items that most want stable cold. Put condiments there — vinegar, mustard, jam, things that are shelf-stable or nearly so — and move the milk and eggs to an interior shelf.
- The back and bottom are coldest. On many models the back of the bottom shelf is cold enough to occasionally freeze lettuce or eggs.
- The bottom shelf is where raw meat belongs, in a container or on a plate. It is both the coldest zone and the one place where a leak cannot drip onto anything below it. This single habit prevents most home cross-contamination.
- Crisper drawers control humidity, not temperature. High humidity for things that wilt — leafy greens, herbs, most vegetables. Low humidity for things that rot from their own ethylene gas — apples, pears, stone fruit. Keeping heavy ethylene producers away from greens genuinely extends the life of the greens.
Airflow: do not pack it solid
A refrigerator cools by circulating air. Packing it wall to wall creates pockets that never get cold air, which is how you end up with one shelf running well above the number on your thermometer. This is a common state for a fridge right after a big grocery trip, which is exactly when it is fullest of newly perishable food.
The opposite extreme is less of a problem than folklore suggests. A nearly empty fridge recovers more slowly after the door opens, because there is less cold mass inside, but it still holds temperature fine. A nearly empty freezer benefits noticeably from being filled — even with jugs of water — because the frozen mass buffers against warming.
When the power goes out
The rules here are simple and worth knowing before you need them. Keep the doors closed. Every opening costs you hours.
- Refrigerator: about 4 hours if the door stays shut.
- Full freezer: about 48 hours. Half-full: about 24.
When power returns, judge by temperature, not by appearance. Food that stayed at or below 40°F is fine. Food above 40°F for more than two hours should go. Frozen food that still has ice crystals or reads 40°F or below can be safely refrozen — it will lose some quality, but it is safe.
Do not taste anything to test it, and do not trust that a solid-looking package is a cold one. This is the situation the phrase "when in doubt, throw it out" was written for.
The short version
Buy a thermometer. Put it on the middle shelf overnight. If it reads above 40°F, adjust one step and test again. Move the milk and eggs off the door, put raw meat on the bottom shelf, and leave room for air to move. That is the whole guide, and it takes about ten minutes plus the cost of a thermometer.
