Fried rice keeps 3–4 days refrigerated, and the handling rules are stricter than for almost any other leftover: refrigerate within one hour, in shallow containers, spread thin.
This is not general caution. Fried rice has a documented illness pattern serious enough that it carries an informal name, and the mechanism is entirely about how the rice was handled before it was fried.
Good fried rice is traditionally made with day-old rice, which is fine — provided that rice was refrigerated promptly after its first cooking. Rice left on the counter overnight to dry out, then fried the next day, is the exact scenario that causes illness. Frying does not fix it.
Reheat fried rice once, thoroughly, until steaming throughout. Do not reheat repeatedly, and do not hold it warm for extended periods.
It freezes well for about a month and reheats straight from frozen.

Why fried rice goes bad
Fried rice is the origin of the term "fried rice syndrome", and the mechanism is worth understanding precisely because it defeats every intuition about cooking making food safe.
Bacillus cereus is a spore-forming bacterium common on raw rice. Its spores survive boiling. When cooked rice is left at room temperature, those spores germinate and the bacteria multiply, producing cereulide — a toxin that is remarkably heat-stable, withstanding temperatures well above those reached in a wok.
So the sequence that causes illness is: rice cooked, rice left out for hours, toxin accumulates, rice fried at high heat. The frying kills the bacteria completely and does nothing whatsoever to the toxin. The finished dish tastes normal, smells normal, and looks normal.
Symptoms are typically rapid-onset vomiting, one to five hours after eating. Cases are usually mild, but severe outcomes have been documented, and a widely discussed fatal case involved pasta left out for five days.
The lesson generalizes: for cooked starches, cooling speed is the safety control, and cooking temperature is not. Rice destined for fried rice should go into the refrigerator within an hour of being boiled, spread thin so it cools fast — which also happens to produce drier, better-frying grains.
