How to store smoked sausage
Cooked smoked sausage — kielbasa, andouille, smoked links — keeps about one week refrigerated once opened, and until its package date while the vacuum seal is intact. Hard dry sausages like pepperoni keep considerably longer, 2–3 weeks opened.
Rewrap tightly after opening or move it to an airtight container. The smoke and cure slow bacterial growth substantially but do not stop it, and the product is ready-to-eat, so there is no cooking step guaranteed to follow.
Freeze for 1–2 months. The limit is set by fat rancidity rather than safety, so it stays safe well beyond that but tastes stale.

Why smoked sausage goes bad
Smoked sausage has three overlapping preservation mechanisms, which is why it outlasts fresh sausage by a factor of five. It has been fully cooked, which is a kill step. It has been cured with salt and nitrite, which lowers water activity and inhibits bacteria — including Clostridium botulinum, the specific target of nitrite curing. And smoke itself deposits phenolic compounds that are mildly antimicrobial and antioxidant.
None of that survives contact with your kitchen. Once opened, smoked sausage is a moist, ready-to-eat, refrigerated meat — the Listeria category, since that organism grows at fridge temperature and no cooking step is guaranteed before eating.
Hard dry sausages such as pepperoni last longer still because they have lost so much water that bacteria cannot grow well in them at all. That is preservation by dehydration rather than by refrigeration, and it is why they tolerate room temperature better than any other product here.
Discard on a slimy casing, a sour or rancid smell distinct from the smoke, or gray-green color.
